Ingredients

  • 1 cup rice
  • 1 lb chicken breasts, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Sauté diced onions and minced garlic for 2-3 minutes until fragrant.
  3. Add chopped chicken, salt, and pepper and sauté until lightly browned.
  4. Stir in rice, chicken broth, and frozen mixed vegetables.
  5. Secure the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
  6. Allow for natural pressure release for 5 minutes before manually releasing the remaining pressure.
  7. Stir in heavy cream and shredded cheddar cheese until creamy and combined.

Notes

For a thicker consistency, add a splash of extra broth or water. Customize with your kids’ favorite vegetables and toppings.
